This is what I would do to max production of weapons and armor. I surround my granary with 9 apple orchards,6-10 hunters posts(where there is no deer in the territory)6 dairy farms and 16 bread bakers.In about 10 minutes I have more food than I know what to do with. Larger economies tend to be much more resilient after a nasty attack. Enemies must get through all those peasants and buildings to get to your keep. They always mean better production, more gold.and better defense. Higher populations mean higher income from taxes. More workers for more industries equals more goods/weapons for better defense and more gold through sales of surpluses. I would get your population up as high and as fast as you can. Ten gold each per month like clockwork, it adds up. You'll need castle services too, for rats, gong and crime. Inn and/or church, whatever it takes to get taxes to a -16. From what I read, a lot of players don't set up nearly enough weapons production, especially for archers. Need more weapons? Create lots more workshops. Weapons workshops need to be near the stockpile and the armory (except for tanners). This will produce a lot of honor and give you a good start on taxes. Always shoot for four food types and double rations.

If I have the time and space for wheat/bread I give that secondary position to apples, dairy and meat, as it's much more efficient. If possible I set my granary in an open area where it can be surrounded by farms (this is for SH2 only). I worry mostly about two areas, food and weapons. Study worker pathways and habits, shorten their trips. In addition, as CaptSkubba said, your building layout can significantly effect production. If you're having a tough time producing enough goods, set more peasants to work. And if you start to build up surpluses you can usually sell those off for much needed gold. Wood is the lifeblood of building up an economy. Set up lots of woodcutters (sawpits) right away. Most of my advice that follows applies to most types of maps, and for SH2, SH1, and Crusader, even though it's directed specifically at SH2.

Have you tried the Path of War and Path of Peace campaigns? These are excellent learning grounds for most of the skills you need in Stronghold 2. I assume you're probably playing Kingmaker.

They will tend to stunt your growth, so to speak, as a Stronghold player. I think you do yourself a great disservice by trying to rely on cheats, rather than concentrating on building your skills.
